One of the things I have been meaning to post about, is the steamed buns or bao that my wife made a while back. While our friend was visiting, she had decided to make ones with different filling, and also different flour. These now look more like the ones which can be bought at the shops.
Red bean is one of the traditional fillings for these buns/bao, but she also wanted to make ones with kaya which essentially is made up of coconut milk, eggs and sugar. She bought a bottle of the kaya spread to use as filling, but when it is hot, the filling takes on a more liquid texture. Still tastes very nice, but also more likely to dribble out of the bao when you first take a bite out of it.
I do like both of them, but the kaya filling can make a bit of a mess if you are not careful.
