Home-made Pineapple tarts

During the recent Chinese New Year, one of our church friends gave us a box of her home-made pineapple tarts to eat. This is one of my favourite pastries, which when made well, will taste absolutely scrumptious.

From the first piece I tasted, I could tell that this was really going to be a treat. The pastry was nice and smooth and melts easily in the mouth. The pineapple filling was made from fresh pineapples, which  took more work to make but also meant that it had all the flavours and natural sweetness of fresh pineapple. This definitely complemented the pastry very well. The flavours and different textures present in each tart, do all try to grab the attention of your senses.

Suffice it to say that I have managed to eat all of them now, and long for more. I am hoping that my wife will be able to learn this recipe and replicate this delicacy – as I can’t wait to eat it again.
