The Trout Inn – Birthday lunch

For my birthday, my wife wanted to take us all out for lunch, since my daughters were still on school holiday. The venue she chose was the Trout Inn in Wolvercote, Oxford, which is not too far from where we live. My wife is always looking for us to experience fine dining with her, and with this pub and restaurant situated in village meant that it would not be too difficult to get to and would not be too noisy. Recently with the Easter period, eggs have featured alot in the supermarkets and television adverts, as eggs are supposed to symbolise new life. Easter Monday Lunch Feast

Over the Good Friday and Easter Sunday weekend, both my wife and I have been working. Hence we have not had time to sit down and celebrate. Even in the early hours of this morning, my wife had to go in to attend to emergencies on two occasions. Hence to cheer her up and to make up for the fact my daughters both had to go in to work with her during this weekend, I decided to get some lovely food for us to celebrate together as a family, and to be thankful. Fluffy Sponge cupcakes

Recently one of our church friends had baked her really lovely sponge cake which is truly light and fluffy. Both my daughters loved it so much, they had requested me to make my Mile High Sponge cake for them. Now as this involves a lot of effort, as both the egg yolks and whites have to be beaten separately and then combined together. And as our friend had given us some Ovalette (sponge cake stabiliser), I felt I needed to try baking with this. Hence I found and modified a recipe I found on the internet.
