Easter Monday Lunch Feast

Over the Good Friday and Easter Sunday weekend, both my wife and I have been working. Hence we have not had time to sit down and celebrate. Even in the early hours of this morning, my wife had to go in to attend to emergencies on two occasions. Hence to cheer her up and to make up for the fact my daughters both had to go in to work with her during this weekend, I decided to get some lovely food for us to celebrate together as a family, and to be thankful. Fluffy Sponge cupcakes

Recently one of our church friends had baked her really lovely sponge cake which is truly light and fluffy. Both my daughters loved it so much, they had requested me to make my Mile High Sponge cake for them. Now as this involves a lot of effort, as both the egg yolks and whites have to be beaten separately and then combined together. And as our friend had given us some Ovalette (sponge cake stabiliser), I felt I needed to try baking with this. Hence I found and modified a recipe I found on the internet. Starters

Now when we do go out to dine, the restaurants do sometimes provide small plates of food to start off the meals – what we call starters. This is supposed to whet the appetite and prepare you for the food to come. Recently I had been looking into new serving plates and dishes to enhance the effect of the food I photograph.
